our philosophy

We place special emphasis on the selection of our suppliers. You can enjoy sausages and meat from Doggwiler Butchery in Lucerne or from butcher Gabriel from the Engelberg Valley. The meat comes from Switzerland, the Zahnder from Estonia, and the duck from France.
We developed the Le Piaf natural sourdough and wholemeal rye bread together with the Kreuzbäckerei in Stans and it perfectly complements our dishes. We mainly source regional fruit and vegetables and prefer to process them when they are in season and ready to eat. Our free-range eggs are from the Fischer Eier family business in Malters. Additionally, we are a member of Slow Food.
Our uniforms are made from organic cotton and recycled plastic from the sea. We think sustainably from A to Z.
